This weekend we’ll be running our Introduction to Distilling Livestream through the Still Spirits Facebook channel. We’re lucky to be able to have some pretty special distillers join us to share their journey towards working in and opening a commercial distillery. 

Jason Parker

Jason Parker is Co-Owner and President of Copperworks Distilling Company, a craft distillery located on the downtown Seattle waterfront. Jason began his career in the alcohol industry in 1989 by working as the first brewer for Pike Place Brewery (now Pike Brewing Company). He went on to refine his craft with Fish Brewing Company in Olympia, Redhook Brewery in Fremont, and Pyramid Breweries in Seattle, where he worked for seven years, ending as Brewmaster. 

In 2009, Jason recognized that the burgeoning craft distilled spirits industry was modeling the craft beer industry's trajectory of 25 years before. Opportunity lured him back to the alcohol industry to launch Copperworks with his friend and home-brewing partner Micah Nutt. Copperworks opened to the public in Oct 5th, 2013. Copperworks produces malt based Vodka, Gin, Cask Finished Gin, and American Single Malt Whiskey. 

Jason holds a M.S. in Information Management from University of Washington, a B.A. in chemistry and a B.S. in microbiology from The Evergreen State College. He was a founding member of the Washington Distillers Guild and served on the board for the first 9 years since its founding in 2010. Jason is a board member of the Craft Malting Guild, and Copperworks Distilling is a charter member of the American Single Malt Whiskey Commission.

Tim’s career in the hospitality and spirits world has spanned over 20 years. Beginning working in local pubs in the UK, Tim went on to a successful career in some of the world's best bars.

Then, focusing on his love of gin, he spent eight years as Global Brand Ambassador for Beefeater Gin, working alongside Master Distiller, Desmond Payne, from whom he learnt the craft of distilling.

Moving to Australia in 2017, he became head distiller at Manly Spirits Co., where he developed a range of award-winning spirits, garnering gold medals at the Australian Distilled Spirits Awards and Double Gold at the San Francisco World Spirits Awards. He is now working on a new project, Hickson House, a distillery in The Rocks, Sydney, producing gins, whisky and specialist spirits.
